The acetic acid bacteria are assiduous
creatures. Without any break, tireless, these unicellular
organisms convert the alcohol into acetic acid within the
fermentation substrate. In return for their zeal the
microorganisms demand ideal living conditions, such as

constant fermentation temperature

optimum provision with oxygen

well balanced relation between alcohol and
acid concentrations

vital nutrients which keep them alive
If all these condition are fulfilled, fermentation will proceed
perfectly and trouble-free Acetobacter catalyse the oxidation of
alcohol into acetic acid according to the formula
C2H5OH+O2
-> CH3COOH+H2O
in a normal process which is continuously repeated in any
fermentation, but which has reached highest industrial and economical maturity only by the application of sophisticated
equipment and measuring and control instruments of FRINGS.
